Ingredients

  • 9 no-boil lasagna noodles
  • 2 cups fresh spinach, chopped
  • 15 oz ricotta cheese (whole milk)
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 medium zucchini, diced
  • 1 bell pepper (any color), diced
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp Italian herbs (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a pan over medium heat, sauté onion and garlic in olive oil until translucent (3-4 minutes).
  3. Add spinach and zucchini; sauté until softened (about 5 minutes). Season with salt and pepper.
  4. In a bowl, mix ricotta, half of the mozzarella, and Parmesan until creamy.
  5. In a baking dish, layer sauce on the bottom, followed by noodles, cheese mixture, and veggies. Repeat layers until all ingredients are used.
  6. Cover with foil and bake for 30 minutes; remove foil after 20 minutes to let the top brown.
  7. Cool slightly before serving.
