  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/4 cup Dijon mustard
  • 1/4 cup pure maple syrup
  • 2 tablespoons fresh rosemary, chopped
  • 3 medium sweet potatoes (about 1.5 lbs), peeled and diced
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions
