  • 1/2 cup cocoa powder
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs (room temperature)
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1 tsp baking powder
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line with paper liners.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and sugar until well combined.
  3. In another bowl, cream softened butter until smooth. Gradually add sugar and mix until fluffy.
  4. Beat in the eggs one at a time and stir in vanilla extract.
  5. Gradually combine dry ingredients with the wet mixture until just mixed; avoid over-mixing.
  6. Fold in chocolate chips and spoon the batter into muffin tins, filling each halfway.
  7. Bake for 10-12 minutes until edges are firm but centers remain soft. Remove from the oven and press mini marshmallows on top while still warm.
  8. Allow cooling slightly before serving.
