  • 2 large flour tortillas
  • 2 cups fresh spinach (about 60g)
  • 1/2 cup crumbled feta cheese (about 75g)
  • 1/2 cup shredded mozzarella cheese (about 60g)
  • 2 tsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper

Instructions

  1. In a large bowl, mix fresh spinach, crumbled feta, and mozzarella cheese. Sprinkle garlic powder and black pepper over the mixture.
  2. Heat 1 tsp of olive oil in a skillet over medium heat until shimmering. Add the spinach mixture and sauté until wilted, about 3 minutes.
  3. Place one tortilla on a flat surface and spoon half of the filling onto one side. Fold the tortilla over to create a semi-circle.
  4. Heat the remaining olive oil in the skillet over medium-high heat. Cook the quesadilla for about 3-4 minutes per side until golden brown and crispy.
