  • 1 tsp pure vanilla extract

Instructions

  1. Toast sesame seeds in a skillet over medium heat until golden and fragrant, stirring frequently.
  2. In a saucepan, combine sugar and water over medium heat; stir until dissolved and boil gently until it reaches a soft-ball stage (240°F or 115°C).
  3. Remove from heat and stir in vanilla extract. Optionally add cardamom or rose water.
  4. Quickly pour syrup over toasted sesame seeds in a large bowl; mix vigorously with a wooden spoon until combined.
  5. Grease a square baking dish with oil, pour the mixture in, and press down firmly.
  6. Allow to cool for about 2 hours before cutting into squares.
