Ingredients

  • 1 lb ground lamb or beef
  • 1 medium yellow onion, diced
  • 1 cup carrots, finely chopped
  • 1 cup frozen peas
  • 1 cup low-sodium vegetable broth
  • 2 cups mashed potatoes (homemade or store-bought)
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat olive oil in a large skillet over medium heat. Sauté the diced onions and chopped carrots until soft (about 5 minutes).
  3. Add the ground lamb or beef, cooking until browned (7-10 minutes).
  4. Stir in frozen peas and vegetable broth; season with thyme and Worcestershire sauce, then simmer for 5-7 minutes.
  5. While simmering, prepare mashed potatoes by mixing with butter and cream until smooth.
  6. Spoon the meat filling into greased muffin tins or ramekins, topping each with dollops of mashed potatoes.
  7. Bake for 20-25 minutes until tops are golden brown.
