  • 3 tbsp extra virgin olive oil
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 (14 oz) can diced tomatoes
  • 6 cups vegetable broth
  • 1 cup green beans, chopped
  • 1 tsp dried thyme
  • Salt & pepper to taste
  • 1 tbsp lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic; sauté until fragrant and translucent (about 5 minutes).
  2. Incorporate sliced carrots and chopped celery; sauté for an additional 3-4 minutes until they soften.
  3. Pour in canned tomatoes with their juice and add vegetable broth. Stir to combine.
  4. Add chopped green beans and dried thyme; season generously with salt and pepper. Bring to a simmer.
  5. Allow the soup to simmer on low heat for about 20 minutes or until all vegetables are tender.
  6. Just before serving, stir in fresh lemon juice for brightness.
