Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, cream the softened butter until light and fluffy. Gradually add sugar and mix well.
  4. Add eggs one at a time, mixing in the vanilla extract and orange zest until combined.
  5. Alternately mix in the dry ingredients with the milk until just combined; do not over-mix.
  6. Divide the batter evenly into cupcake liners and bake for 18-20 minutes or until golden brown.
  7. While cooling, whip heavy cream with powdered sugar and orange juice until soft peaks form.
