  • 1 lb ground beef (80/20)
  • 2 medium sweet onions, thinly sliced
  • 6 slices Swiss cheese
  • 4 slices rye bread (or sturdy bread of choice)
  • 2 tbsp unsalted butter (for frying)
  • Salt and pepper to taste

Instructions

  1. Caramelize the Onions: In a skillet over medium heat, melt 1 tablespoon of butter. Add sliced onions and cook for about 10 minutes until golden brown.
  2. Cook the Patties: Form ground beef into patties about ½ inch thick. Season with salt and pepper. In another skillet, melt remaining butter over medium-high heat and cook patties for about 4-5 minutes per side until desired doneness.
  3. Melt the Cheese: Place Swiss cheese on each patty in the last minute of cooking and cover briefly to allow melting.
  4. Assemble: Butter one side of each slice of bread. In a clean skillet, place one slice butter-side down, add a patty with onions on top, then finish with another slice butter-side up.
  5. Grill: Cook each sandwich over medium heat for about 3-4 minutes per side until crispy and golden brown.
