- 1/2 cup pesto sauce (store-bought or homemade)
- 4 ciabatta rolls
- 8 oz fresh mozzarella cheese
- 1 tbsp extra virgin olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Preheat your oven to 375°F (190°C). Season chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Sear the chicken until golden brown on both sides (about 6-7 minutes per side) until cooked through.
- Allow the chicken to rest for 5 minutes, then shred or slice it into bite-sized pieces.
- Cut open each ciabatta roll and spread pesto on both sides. Add shredded chicken and top with slices of fresh mozzarella.
- Place assembled sandwiches on a baking sheet lined with parchment paper and bake for 10-12 minutes until the cheese is melted and bubbly.
