  • 1/2 cup pesto sauce (store-bought or homemade)
  • 4 ciabatta rolls
  • 8 oz fresh mozzarella cheese
  • 1 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Sear the chicken until golden brown on both sides (about 6-7 minutes per side) until cooked through.
  3. Allow the chicken to rest for 5 minutes, then shred or slice it into bite-sized pieces.
  4. Cut open each ciabatta roll and spread pesto on both sides. Add shredded chicken and top with slices of fresh mozzarella.
  5. Place assembled sandwiches on a baking sheet lined with parchment paper and bake for 10-12 minutes until the cheese is melted and bubbly.
