  • 1 lb ribeye steak, thinly sliced
  • 1 cup bell peppers (mixed colors), sliced
  • 1 medium sweet onion, sliced
  • 1 cup fresh mushrooms, sliced
  • 4 oz provolone cheese, shredded (or Cheez Whiz)
  • 2 cups cooked rice or quinoa
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Prep your ingredients by slicing ribeye against the grain and chopping vegetables.
  2. Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers until softened (4-5 minutes).
  3. Add mushrooms and garlic powder; cook until mushrooms are tender (3 minutes).
  4. Push veggies aside, increase heat to high, and add the ribeye strips seasoned with salt and pepper. Cook until browned but juicy (3-4 minutes).
  5. Drizzle soy sauce over the mixture, stir gently, then top with provolone cheese. Cover until melted (1-2 minutes).
