  • 3 large eggs (at room temperature)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers with sugar, then add melted butter until crumbly. Press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add sugar until fluffy.
  3. Fold in pineapple chunks and sour cream until combined.
  4. Add eggs one at a time, mixing gently until just combined. Avoid overmixing.
  5. Pour filling over crust and bake for 50-60 minutes until edges are set but center slightly jiggles.
  6. Turn off oven, cool cheesecake inside for an hour, then refrigerate for at least four hours or overnight before serving.
