  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 1 tsp vanilla extract
  • 1/2 cup roasted pistachios, finely chopped
  • 1 cup fresh blackberries
  • Whipped cream for topping

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs with melted butter and press into cupcake liners or tart pans. Bake for 10 minutes until golden.
  2. Beat cream cheese and sugar until smooth; add sour cream and vanilla extract, mixing until fully incorporated.
  3. Gently fold in chopped pistachios and pour half of the filling into each crust. Layer fresh blackberries on top before adding more filling.
  4. Bake at 325°F (160°C) for 25-30 minutes until edges are set but center is slightly jiggly.
  5. Allow to cool at room temperature, then refrigerate for at least four hours before serving.
