  • 4 skin-on salmon fillets (46 oz each)
  • 1 cup unsalted roasted pistachios
  • 1/2 cup fresh parsley, chopped
  • 2 tbsp fresh dill, chopped
  • 3 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a food processor, combine pistachios, parsley, dill, garlic, lemon zest, salt, and pepper. Pulse until finely chopped.
  3. Place the salmon fillets on a parchment-lined baking sheet. Drizzle with olive oil and season lightly with salt and pepper.
