  • 8 oz spaghetti or fusilli
  • 1/2 cup unsalted roasted pistachios
  • 1 cup fresh basil leaves
  • 2 garlic cloves
  • 1/4 cup extra virgin olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in boiling salted water according to package instructions until al dente (about 8-10 minutes). Drain and set aside.
  2. In a food processor, combine pistachios, basil, garlic, and a pinch of salt. Pulse until finely chopped.
  3. Gradually drizzle in olive oil while blending until smooth.
  4. With the processor running on low, add Parmesan cheese and lemon juice. Blend until creamy; adjust seasoning as needed.
  5. Toss the cooked pasta with the pistachio pesto until well coated.
  6. Serve immediately, garnished with extra Parmesan or crushed pistachios if desired.
