  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 cup chicken broth
  • 2 tbsp Dijon mustard
  • 1 tbsp fresh rosemary, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet over medium-high heat, add olive oil. Sear the pork tenderloin for about 3-4 minutes on each side until browned.
  3. Add chopped onions and minced garlic; sauté until fragrant. Stir in sliced apples and cook until slightly softened.
  4. Deglaze the skillet with chicken broth and Dijon mustard, scraping up any browned bits. Simmer for about 2 minutes.
  5. Transfer everything to a baking dish (if necessary) and roast uncovered for 25-30 minutes or until the pork reaches an internal temperature of 145°F (63°C).
