- 1 cup all-purpose flour
- 1/2 cup unsalted butter (softened)
- 1/3 cup granulated sugar
- 4 egg yolks
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1 cinnamon stick
Instructions
- Prepare the pastry by mixing flour and softened butter until crumbly. Gradually add ice-cold water until the dough holds together. Wrap in plastic wrap and chill for at least 1 hour.
- Roll out the chilled dough to an eighth of an inch thick and cut circles larger than your muffin tin cups.
- Preheat the oven to 475°F (245°C).
- In a saucepan, combine milk and cinnamon stick over medium heat; simmer for about 5 minutes.
- Whisk together sugar and egg yolks until pale, then slowly add the warm milk while whisking continuously.
- Fill each pastry shell three-quarters full with custard mixture.
- Bake for 15-20 minutes until golden brown on top.
- Let cool slightly before transferring to wire racks.
