Ingredients

  • 1 cup fresh pumpkin puree (about 1 small sugar pumpkin)
  • 1 cup whole milk ricotta cheese
  • 2 medium yellow onions, sliced
  • 4 slices thick-cut bacon, diced
  • 6 fresh sage leaves, finely chopped
  • 1 sheet puff pastry (thawed)
  • 2 large eggs
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Roll out the puff pastry to fit your tart pan.
  2. In a skillet over medium heat, cook the diced bacon until crispy. Remove and set aside. In the same pan, add the sliced onions and caramelize until golden brown.
  3. In a large bowl, combine ricotta cheese, pumpkin puree, eggs, chopped sage, salt, pepper, and half of the Parmesan cheese until smooth.
  4. Gently fold in the caramelized onions and cooked bacon.
  5. Pour the filling into the prepared puff pastry shell. Sprinkle with remaining Parmesan.
  6. Bake for 35-40 minutes or until set and lightly browned. Cool slightly before slicing.
