- 1 cup fresh pumpkin puree (about 1 small sugar pumpkin)
- 1 cup whole milk ricotta cheese
- 2 medium yellow onions, sliced
- 4 slices thick-cut bacon, diced
- 6 fresh sage leaves, finely chopped
- 1 sheet puff pastry (thawed)
- 2 large eggs
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Roll out the puff pastry to fit your tart pan.
- In a skillet over medium heat, cook the diced bacon until crispy. Remove and set aside. In the same pan, add the sliced onions and caramelize until golden brown.
- In a large bowl, combine ricotta cheese, pumpkin puree, eggs, chopped sage, salt, pepper, and half of the Parmesan cheese until smooth.
- Gently fold in the caramelized onions and cooked bacon.
- Pour the filling into the prepared puff pastry shell. Sprinkle with remaining Parmesan.
- Bake for 35-40 minutes or until set and lightly browned. Cool slightly before slicing.
