  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp baking powder
  • 3 large eggs (room temperature)
  • 8 oz cream cheese (softened)
  • 1 tsp vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a bowl, combine flour, sugar, spices, baking powder, and salt.
  3. In another bowl, mix pumpkin puree, eggs, and vanilla until smooth. Combine both mixtures gently.
  4. Spread batter evenly in the pan and bake for 15-20 minutes until a toothpick comes out clean.
  5. Cool for 5 minutes in the pan then flip onto a powdered sugar-dusted kitchen towel; roll up while warm.
  6. Beat cream cheese and powdered sugar until smooth; add vanilla.
  7. Unroll cooled cake, spread frosting evenly, and roll it up again without the towel.
  8. Slice with a serrated knife and serve.
