  • 1 cup canned pumpkin puree (100% pure)
  • 1 cup mascarpone cheese
  • 12 ladyfingers (savoiardi)
  • 1 cup brewed espresso or strong coffee
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup heavy cream
  • 1/2 cup granulated sugar

Instructions

  1. Brew a strong cup of espresso or coffee and let it cool slightly.
  2. In a bowl, whisk together mascarpone cheese, pumpkin puree, sugar, cinnamon, and nutmeg until smooth.
  3. In a separate bowl, whip heavy cream until stiff peaks form and gently fold it into the pumpkin mixture.
  4. Quickly dip each ladyfinger into the cooled coffee and layer them in a dish.
  5. Spread half of the pumpkin filling over the ladyfingers; repeat layers until ingredients are used up.
  6. Cover with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld.
