  • 2 cups fresh raspberries (or frozen, thawed)
  • 3/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1 cup quick oats
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan or line it with parchment paper.
  2. In a bowl, combine raspberries with half of the sugar (about 1/4 cup) and gently mash them.
  3. In another bowl, mix flour, oats, baking powder, remaining sugar (1/2 cup), and salt. Stir in melted butter until crumbly.
  4. Press half of the crumble mixture into the bottom of the prepared pan. Spread the mashed raspberries on top.
  5. Sprinkle the remaining crumble mixture over the raspberries. Bake for 30-35 minutes until golden brown.
  6. Allow to cool completely before cutting into squares.
