  • 1 lb lean ground beef
  • 1/2 cup panko breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1 large egg
  • 1 cup red wine (your favorite)
  • 1 can (14 oz) crushed tomatoes
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine ground beef, panko breadcrumbs, parsley, egg, garlic, onion, salt, pepper, and Italian seasoning. Mix until just combined.
  2. Shape the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat. Sear meatballs in batches until browned on all sides (about 5 minutes).
  4. Pour in the red wine and crushed tomatoes; scrape up any bits from the pan. Bring to a simmer.
  5. Cover and reduce heat to low; let simmer for about 30 minutes until the sauce thickens and flavors meld.
  6. Serve over pasta or polenta; garnish with additional parsley or grated parmesan if desired.
