A light, refreshing, and colorful Asian-inspired salad featuring tender flaked salmon, delicate rice vermicelli, crisp red cabbage, sweet green peas, and matchstick carrots, all tossed in a zesty lime-sesame dressing.
Ingredients
For the Salad
- Salmon: 12 oz (340g) fresh wild-caught salmon fillet
- Rice Noodles: 4 oz (115g) thin rice vermicelli noodles
- Red Cabbage: 1 cup finely shredded purple cabbage
- Carrots: 1/2 cup matchstick or coarsely grated carrots
- Green Peas: 1/2 cup sweet green peas (blanched or thawed)
- Fresh Cilantro: 1/4 cup fresh cilantro leaves, roughly chopped
- Garnish: Fresh lime wedges and freshly cracked black pepper
For the Zesty Lime-Sesame Dressing
- Sesame Oil: 2 tbsp toasted sesame oil (or extra virgin olive oil)
- Lime Juice: 2 tbsp freshly squeezed lime juice
- Soy Sauce: 1 tbsp low-sodium soy sauce or tamari
- Honey: 1 tbsp raw honey or maple syrup
- Seasoning: Salt and freshly ground black pepper to taste
Instructions
Bake the Salmon:

Preheat your oven to 375°F (190°C).

Season the salmon fillet lightly with salt and black pepper.

Place on a baking sheet lined with parchment paper and bake for 12–15 minutes until tender and flaky.

Remove from heat, let it cool slightly, and gently flake into bite-sized pieces with a fork.

Prepare the Noodles:

Cook the thin rice noodles according to package instructions (usually soaking in boiling water for 3–5 minutes).

Drain and rinse immediately under cold water to stop the cooking process.

- Whisk the Dressing:

In a small bowl, combine sesame oil, fresh lime juice, soy sauce, honey, salt, and pepper. Whisk until emulsified.

Assemble & Toss:

In a large serving bowl, combine the cooled rice noodles, shredded red cabbage, matchstick carrots, green peas, and fresh cilantro.

Drizzle the dressing over the noodle mixture and toss gently until well coated.

Fold in the flaked salmon gently to keep the chunks intact.
