  • 1 lb Italian sausage (spicy or mild)
  • 1 cup dried cranberries
  • 1 cup celery (finely chopped)
  • 1 medium yellow onion (diced)
  • 2 tsp fresh sage (chopped) or 1 tsp dried
  • 2 tsp fresh thyme (chopped) or 1 tsp dried
  • 2 large eggs
  • 4 cups stale bread cubes
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. In a skillet over medium heat, sauté onions and celery until soft, about 5 minutes.
  3. Add crumbled sausage; cook until browned.
  4. Stir in cranberries, sage, and thyme for another 2 minutes.
  5. In a large bowl, combine bread cubes and sausage mixture; pour broth over it all and mix gently.
  6. Fold in beaten eggs, then spoon mixture into muffin tins.
  7. Bake for 20-25 minutes until golden brown.
