  • 2 cups butternut squash (peeled and cubed)
  • 8 oz fettuccine pasta
  • 1/4 cup fresh sage leaves (chopped)
  • 4 cloves garlic (minced)
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Spread cubed butternut squash on the baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes until tender and golden.
  3. Meanwhile, boil water in a large pot. Add salt, then cook fettuccine according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
  4. In a large skillet over medium heat, heat olive oil. Sauté minced garlic and chopped sage for 1-2 minutes until fragrant.
  5. Add roasted squash to the skillet; mash some pieces for creaminess. Gradually stir in reserved pasta water to achieve desired sauce consistency.
  6. Combine cooked pasta with the sauce and grated Parmesan cheese; toss thoroughly to coat.
