  • 1 ½ cups powdered sugar
  • 3 large egg whites (room temperature)
  • ¼ cup granulated sugar
  • 1 tsp ube extract
  • 4 tbsp butter (softened)
  • ½ cup heavy cream (chilled)
  • Food coloring (optional)

Instructions

  1. Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift together almond flour and powdered sugar in a mixing bowl.
  3. In a separate bowl, whip egg whites until frothy, gradually add granulated sugar, and continue whipping until stiff peaks form.
  4. Gently fold in ube extract and food coloring if using until evenly combined.
  5. Pipe small circles onto prepared baking sheets, leaving space between each macaron.
  6. Bake for 15-20 minutes until slightly risen and dry on top; cool completely before removing from parchment.
  7. For the filling, whip softened butter until creamy, gradually add heavy cream, and mix until fluffy.
  8. Spread or pipe the ube filling between matching macaron shells.
