- 1 medium onion, finely chopped
- 1/2 cup ketchup
- 1 tbsp Worcestershire sauce
- 1 tbsp yellow mustard
- 1 tsp garlic powder
- 2 large sweet potatoes (about 1.5 lbs), peeled and diced
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss diced sweet potatoes in olive oil, salt, and pepper. Spread them in an even layer on the baking sheet.
- Roast sweet potatoes for about 25–30 minutes until tender and crispy, flipping halfway through.
- In a skillet over medium heat, brown the ground beef with chopped onions until cooked through.
- Stir in ketchup, Worcestershire sauce, mustard, garlic powder, salt, and pepper; simmer for 5 minutes.
- Serve the sloppy joe mixture over roasted sweet potatoes; garnish if desired.
