Description

Sloppy Joes on roasted sweet potatoes is a delightful twist on a classic comfort food. The sweet, caramelized potatoes serve as the perfect base for the savory, tangy sloppy joe mix, creating a satisfying meal that’s both hearty and nutritious.


Ingredients

  • 1 lb ground beef (lean)
  • 1 medium onion, finely chopped
  • 1/2 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp yellow mustard
  • 1 tsp garlic powder
  • 2 large sweet potatoes (about 1.5 lbs), peeled and diced
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss diced sweet potatoes in olive oil, salt, and pepper. Spread them in an even layer on the baking sheet.
  3. Roast sweet potatoes for about 25–30 minutes until tender and crispy, flipping halfway through.
  4. In a skillet over medium heat, brown the ground beef with chopped onions until cooked through.
  5. Stir in ketchup, Worcestershire sauce, mustard, garlic powder, salt, and pepper; simmer for 5 minutes.
  6. Serve the sloppy joe mixture over roasted sweet potatoes; garnish if desired.
