  • 2 lbs beef chuck roast
  • 4 cups fresh baby spinach
  • 1 cup long-grain white rice
  • 1 cup Korean BBQ sauce
  • 4 garlic cloves (minced)
  • 1-inch piece ginger root (grated)
  • 2 tsp sesame oil
  • 4 green onions (chopped)
  • 3 cups beef broth

Instructions

  1. Prepare your ingredients: Mince garlic, grate ginger, and chop green onions.
  2. Sear the beef in a hot skillet for 3-4 minutes per side until browned.
  3. Add the seared beef to the slow cooker along with garlic, ginger, BBQ sauce, spinach, rice, broth, and sesame oil. Mix gently.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is fork-tender.
