Ingredients
- 3 lbs pork shoulder
- 1 large onion, sliced
- 4 garlic cloves, minced
- 1 cup low-sodium chicken broth
- 2 tsp paprika
- 1 tsp ground cumin
- 1 tsp black pepper
- 1 tbsp olive oil
- Salt to taste
Instructions
- Trim excess fat from the pork shoulder and season generously with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear all sides of the pork until golden brown (about 3-4 minutes per side).
- Place sliced onions and minced garlic in the bottom of the slow cooker.
- Add the seared pork on top of the onions and pour chicken broth around it.
- Sprinkle paprika and cumin over the pork.
- Cover the slow cooker and cook on low for 8 hours or high for 4 hours.
- Once cooked, shred the pork directly in the slow cooker with two forks and mix well before serving.
