  • 2 tbsp olive oil
  • 4 medium-sized Russet potatoes, peeled and chopped
  • 1 medium onion, sliced
  • 3 garlic cloves, minced
  • 2 cups low-sodium chicken broth
  • ½ cup whole milk
  • ¼ cup all-purpose flour
  • Salt and pepper to taste
  • 1 tsp dried thyme
  • ½ tsp paprika

Instructions
