  • 4 boneless, skinless chicken breasts
  • 3 tbsp white or yellow miso paste
  • 1 cup panko breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 4 garlic cloves, minced
  • 2 tbsp olive oil
  • 1/4 cup fresh basil leaves, chopped
  • 1 tsp red pepper flakes (adjust to taste)
  • 1 cup marinara sauce

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper.
  3. In a bowl, mix miso paste, minced garlic, and olive oil until smooth.
  4. Dip chicken into the miso mixture, then coat with panko breadcrumbs.
  5. Arrange in the prepared baking dish and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  6. Remove from oven, spoon marinara sauce over each breast, sprinkle with Parmesan and red pepper flakes, then bake for another 10 minutes.
  7. Garnish with fresh basil before serving.
