Ingredients
- 1 lb fresh salmon
- 1 cup short-grain sushi rice
- 1/3 cup Kewpie mayonnaise
- 2 tbsp Sriracha sauce (adjust to taste)
- 1/2 cup panko breadcrumbs
- 2 nori sheets, cut into strips
- 2 green onions, chopped
- 2 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tsp sesame oil
Instructions
- Rinse and cook the sushi rice according to package instructions.
- Flake the fresh salmon into a bowl and mix with mayonnaise, Sriracha, green onions, soy sauce, and sesame oil until combined.
- Once the rice is cooked, stir in rice vinegar and a pinch of salt. Let it cool slightly.
- In a greased baking dish, layer half of the seasoned rice followed by half of the salmon mixture. Repeat the layers.
