  • 1 lb fresh salmon
  • 1 cup short-grain sushi rice
  • 1/3 cup Kewpie mayonnaise
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 1/2 cup panko breadcrumbs
  • 2 nori sheets, cut into strips
  • 2 green onions, chopped
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil

Instructions

  1. Rinse and cook the sushi rice according to package instructions.
  2. Flake the fresh salmon into a bowl and mix with mayonnaise, Sriracha, green onions, soy sauce, and sesame oil until combined.
  3. Once the rice is cooked, stir in rice vinegar and a pinch of salt. Let it cool slightly.
  4. In a greased baking dish, layer half of the seasoned rice followed by half of the salmon mixture. Repeat the layers.
  5. Top with panko breadcrumbs and bake in a preheated oven at 400°F (200°C) for 15-20 minutes or until golden brown.
