- 12 jumbo pasta shells
- 1 cup ricotta cheese
- 2 cups fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 1 1/2 cups marinara sauce
- 2 cloves garlic, minced
- 1 large egg
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Boil salted water in a large pot and cook the jumbo shells until al dente (9-11 minutes). Drain and set aside.
- In a skillet over medium heat, sauté minced garlic until fragrant. Add chopped spinach and cook until wilted. Remove from heat and let cool slightly.
- In a mixing bowl, combine the cooled spinach, ricotta cheese, grated Parmesan, egg, Italian seasoning, salt, and pepper.
- Generously stuff each cooked shell with the spinach-ricotta mixture and place them upright in an oven-safe dish coated with marinara sauce.
- Pour additional marinara sauce over the stuffed shells and sprinkle with more grated Parmesan.
- Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes until golden brown.
