  • 2 large boneless skinless chicken breasts (halved horizontally into 4 cutlets)
  • 1/2 cup sun-dried tomatoes in oil, drained and julienned
  • 3 cups fresh baby spinach leaves, packed
  • 3/4 cup heavy whipping cream
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup Parmigiano-Reggiano, freshly grated
  • 4 cloves garlic, minced
  • 1 medium shallot, finely diced
  • 2 tbsp extra-virgin olive oil (divided)
  • 1 tbsp unsalted butter
  • 1 tsp dried Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes (optional)
  • Salt and freshly cracked black pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Season & Sear Chicken: Season chicken cutlets with salt, pepper, garlic powder, and Italian seasoning. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown (165°F). Transfer to a plate.
  2. Sauté Aromatics: In the same skillet, sauté shallots and garlic for 1-2 minutes until fragrant. Add sun-dried tomatoes and red pepper flakes, stirring for 1 minute.
  3. Make Cream Sauce: Deglaze pan with chicken broth, then pour in heavy cream and Italian seasoning. Simmer on low, then whisk in grated parmesan cheese until silky smooth.
  4. Add Spinach & Chicken: Stir in fresh spinach until wilted. Return chicken cutlets and juices to skillet, spoon sauce over top, and simmer for 2-3 minutes. Garnish with fresh basil and serve warm.
