  • 2 tbsp kosher salt
  • 1 tbsp freshly ground black pepper
  • 4 garlic cloves, minced
  • 2 sprigs fresh rosemary, chopped
  • 2 sprigs fresh thyme, chopped
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 450°F (230°C).
  2. Rub the roast with salt, pepper, garlic, rosemary, thyme, and olive oil.
  3. Place in a roasting pan on a rack.
  4. Roast at high heat for 20 minutes until browned.
  5. Lower temperature to 325°F (163°C) and cook until internal temperature reaches 130°F (54°C) for medium-rare.
  6. Rest covered with foil for at least 20 minutes before carving.
