Ingredients

Scale
  • 1 lb ribeye or sirloin steak
  • 1 cup queso cheese (Velveeta preferred)
  • 2 cups cooked long-grain white rice
  • 1 cup diced bell peppers (mixed varieties)
  • 1/2 cup diced onion
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. 1. Sear the Steak: Heat oil in a skillet over medium-high heat. Sear the steak for 4-5 minutes on each side until your desired doneness is reached. Remove from skillet and let rest.
  2. 2. Sauté the Veggies: In the same skillet, add diced onion and bell peppers. Sauté for about 3-4 minutes until soft.
  3. 3. Add Spices and Rice: Stir in chili powder, cumin, garlic powder, salt, and pepper. Mix in cooked rice until well combined.
  4. 4. Melt the Queso Cheese: Pour in queso cheese and stir until melted and smooth.
  5. 5. Combine Everything: Slice steak into bite-sized pieces and fold them into the cheesy rice mixture. Simmer for an extra minute to meld flavors.
  6. Serve hot with optional cilantro garnish.
