  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar (for crust)
  • 16 oz fresh cream cheese, softened
  • 1 cup sour cream
  • 1 cup powdered sugar
  • 2 tsp vanilla extract
  • 2 cups fresh strawberries, chopped

Instructions

  1. Preheat the oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press into the bottom of a springform pan to form the crust.
  2. Bake the crust for about 10 minutes until golden. Allow to cool completely.
  3. In another bowl, blend softened cream cheese until smooth. Gradually mix in sour cream and powdered sugar on low speed until combined.
  4. Stir in vanilla extract then fold in chopped strawberries gently.
  5. Pour the filling over the cooled crust and bake for 50-60 minutes or until set but slightly jiggly in the center. Cool at room temperature before chilling in the refrigerator for at least four hours.
