Instructions
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt; set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well. Stir in the lemonade concentrate.
- Gradually add dry ingredients to the wet mixture until just combined; fold in diced strawberries.
- Divide the batter between prepared pans and bake for 25–30 minutes or until golden brown and a toothpick comes out clean.
- Cool in pans for 10 minutes before transferring to wire racks.
- For the frosting, whip heavy cream with powdered sugar until soft peaks form.
- Once cooled, layer the cakes with frosting between them and on top; decorate as desired.
