  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • ¾ cup granulated sugar
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 3 large eggs
  • 2 cups fresh strawberries (sliced)
  • 1 cup whipped cream (lightly sweetened)

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  2. In a bowl, beat softened cream cheese until smooth. Add sugar, sour cream, and vanilla; mix until combined.
  3. Beat in eggs one at a time on low speed. Pour filling over the crust and smooth the top.
  4. Bake for 50-60 minutes until edges are set but center jiggles slightly. Turn off oven; leave cheesecake inside with door ajar for an hour.
