  • 4 bone-in pork chops (1-inch thick)
  • 2 cups fresh spinach
  • 4 garlic cloves, minced
  • 1 cup breadcrumbs (plain or seasoned)
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup low-sodium chicken stock
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the pork chops dry with paper towels.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Stir in the spinach until wilted.
  3. Remove from heat and mix in breadcrumbs, Parmesan cheese, salt, and pepper.
  4. Use a knife to create pockets in each pork chop and stuff generously with the filling.
  5. Sear the stuffed chops in an oven-safe skillet over medium-high heat for about 3-4 minutes per side until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until internal temperature reaches 145°F (63°C). Let rest before serving.
