  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup sweet chili sauce
  • 2 tbsp low-sodium soy sauce
  • 1-inch piece of fresh ginger, grated
  • 2 tbsp vegetable oil
  • 2 tbsp honey or maple syrup
  • Juice of 1 lime
  • ½ tsp red pepper flakes (optional)

Instructions

  1. Prep your ingredients by finely chopping garlic and ginger.
  2. Marinate chicken in a bowl with sweet chili sauce, soy sauce, garlic, ginger, lime juice, and honey for at least 30 minutes.
  3. Heat vegetable oil in a skillet over medium-high heat. Sear marinated chicken for about 6-7 minutes on each side until golden brown; remove from skillet.
  4. In the same skillet, add remaining marinade and optional red pepper flakes; simmer for about 5 minutes until slightly thickened.
  5. Return chicken to the skillet and baste with sauce while cooking for another 5-7 minutes until heated through.
  6. Slice chicken and serve over rice or noodles with extra sauce drizzled on top.
