- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 1 cup sweet chili sauce
- 2 tbsp low-sodium soy sauce
- 1-inch piece of fresh ginger, grated
- 2 tbsp vegetable oil
- 2 tbsp honey or maple syrup
- Juice of 1 lime
- ½ tsp red pepper flakes (optional)
Instructions
- Prep your ingredients by finely chopping garlic and ginger.
- Marinate chicken in a bowl with sweet chili sauce, soy sauce, garlic, ginger, lime juice, and honey for at least 30 minutes.
- Heat vegetable oil in a skillet over medium-high heat. Sear marinated chicken for about 6-7 minutes on each side until golden brown; remove from skillet.
- In the same skillet, add remaining marinade and optional red pepper flakes; simmer for about 5 minutes until slightly thickened.
- Return chicken to the skillet and baste with sauce while cooking for another 5-7 minutes until heated through.
- Slice chicken and serve over rice or noodles with extra sauce drizzled on top.
