  • 1 lb lean ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup sweet corn (fresh or frozen)
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar and Monterey Jack blend)
  • 1 cup cornmeal
  • 1 cup whole milk
  • 2 large eggs
  • ½ cup sour cream

Instructions

  1. Preheat the oven to 400°F (200°C). In a skillet over medium heat, brown the ground beef until fully cooked.
  2. Stir in taco seasoning, black beans, and corn; cook for an additional 5 minutes.
  3. In a bowl, mix cornmeal, milk, eggs, and sour cream until smooth.
  4. Layer half the beef mixture in a greased baking dish, sprinkle with cheese, top with remaining beef mixture, and pour cornbread batter over it.
  5. Bake for 25-30 minutes until golden brown. Let cool slightly before serving.
