- 1 red bell pepper, sliced
- 1 cucumber, sliced
- 4 green onions, chopped
- 1/2 cup peanut butter (creamy or crunchy)
- 1/4 cup low-sodium soy sauce
- Juice of 1 lime
- 1 tsp chili flakes (optional)
- 1 can (400ml) full-fat coconut milk
- 2 tbsp honey or maple syrup
- Fresh cilantro for garnish (optional)
Instructions
- Prepare your ingredients by washing and chopping the vegetables.
- Heat oil in a skillet over medium-high heat. Season and cook chicken breasts until golden brown on both sides (5-7 minutes per side).
