  • 4 boneless, skinless chicken breasts (about 680g)
  • 3 cloves fresh garlic, minced
  • 1 red bell pepper, sliced
  • 1 cucumber, sliced
  • 4 green onions, chopped
  • 1/2 cup peanut butter (creamy or crunchy)
  • 1/4 cup low-sodium soy sauce
  • Juice of 1 lime
  • 1 tsp chili flakes (optional)
  • 1 can (400ml) full-fat coconut milk
  • 2 tbsp honey or maple syrup
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prepare your ingredients by washing and chopping the vegetables.
  2. Heat oil in a skillet over medium-high heat. Season and cook chicken breasts until golden brown on both sides (5-7 minutes per side).
  3. In a bowl, whisk together peanut butter, coconut milk, soy sauce, honey or maple syrup, lime juice, and chili flakes until smooth.
  4. Add minced garlic and sliced bell peppers to the skillet during the last few minutes of cooking until slightly softened.
  5. Serve the chicken over rice or noodles and generously drizzle with the peanut sauce. Top with sliced cucumber and green onions.
