  • ½ cup freshly grated Parmesan cheese
  • ¼ tsp red pepper flakes (adjust to taste)

Instructions

  1. 1. Cook the Pasta: Boil a large pot of salted water and cook the pasta according to package directions until al dente (about 8-10 minutes). Drain and reserve some pasta water.
  2. 2. Sauté Garlic and Shrimp: In a skillet over medium heat, add olive oil and minced garlic. Sauté until fragrant (about 30 seconds), then add shrimp. Cook until pink and opaque (about 3-4 minutes).
  3. 3. Add Tomatoes and Spinach: Stir in cherry tomatoes and spinach. Cook until the tomatoes soften and spinach wilts (2-3 minutes).
  4. 4. Combine: Add drained pasta to the skillet, tossing everything together gently. If dry, add a splash of reserved pasta water.
  5. 5. Season and Serve: Sprinkle with salt, pepper, red pepper flakes, and Parmesan cheese. Toss well before serving.
