  • 1 can (5 oz) tuna, drained
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 2 green onions, chopped
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 2 medium flour tortillas
  • 2 tsp olive oil or butter

Instructions

  1. In a bowl, mix together the drained tuna, mayonnaise, Dijon mustard, chopped green onions, salt, and pepper until combined.
  2. Heat olive oil or butter in a nonstick skillet over medium heat.
  3. Place one tortilla in the skillet and spread half of the tuna mixture on one half. Sprinkle with half of the shredded cheese and fold the tortilla over.
  4. Cook for 3-4 minutes per side until golden brown and crispy. Repeat with the second tortilla.
  5. Let rest before slicing into wedges and serve with salsa or guacamole.
