  • 2 tsp olive oil
  • 2 tbsp fish sauce
  • 1 tbsp tamarind paste
  • 1 tbsp brown sugar
  • Juice of 1 lime

Instructions

  2. Make the sauce: In a bowl, whisk together fish sauce, tamarind paste, brown sugar, and lime juice.
  3. Sauté vegetables: Heat olive oil in a skillet over medium heat. Add carrots and bell pepper; cook until slightly softened.
  4. Add zucchini noodles: Stir-fry for about 3 minutes until tender but still crunchy.
  5. Scramble the eggs: Push veggies aside, crack eggs into the skillet, scramble until cooked through, then mix everything.
  6. Combine: Pour the sauce over the mixture and stir well for another minute.
