  • 1 lb fresh skinless salmon fillets
  • 1 cup panko breadcrumbs
  • 2 green onions, finely chopped
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 large egg, beaten
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 burger buns (brioche recommended)
  • Toppings: lettuce, tomato, etc.

Instructions

  1. Finely chop the salmon fillets and place them in a bowl.
  2. Add panko breadcrumbs, green onions, lemon juice, Dijon mustard, beaten egg, salt, and pepper; mix until well combined.
  3. Form the mixture into patties about 1 inch thick. Place on parchment paper while you prepare to cook.
  4. Preheat a grill or skillet over medium heat and lightly oil it. Cook each patty for 4-5 minutes per side until golden brown and internal temperature reaches 145°F (63°C).
  5. Toast buns on the grill if desired. Assemble with patties and your choice of toppings.
