Ingredients

  • 3 lbs brisket corned beef
  • 1 medium green cabbage (quartered)
  • 4 large carrots (chopped into thick pieces)
  • 2 medium Yukon Gold potatoes (quartered)
  • 2 cups low-sodium beef broth
  • 2 tbsp pickling spice blend
  • 1 large sweet onion (sliced)

Instructions

  1. Wash and prepare all vegetables: chop carrots, slice onion, and quarter potatoes.
  2. Place the corned beef brisket in the Instant Pot. Layer with onions, carrots, potatoes, and cabbage.
  3. Pour beef broth over the ingredients until covered halfway. Sprinkle with pickling spice.
  4. Seal the lid of the Instant Pot and cook on high pressure for 90 minutes.
  5. Allow a natural pressure release for 10 minutes before manually releasing remaining steam. Slice the brisket and serve with vegetables.
