  • 34 lbs chuck roast
  • 1 jar (12 oz) pepperoncini peppers
  • 1 packet au jus gravy mix (1 oz)
  • 1 packet ranch dressing mix (1 oz)
  • 1 cup low-sodium beef broth
  • 1 tbsp butter

Instructions

  1. Preheat your slow cooker or Dutch oven.
  2. Sear the chuck roast in a skillet over medium-high heat until golden brown, about 3-4 minutes per side.
  3. Place the seared roast in the slow cooker or Dutch oven. Sprinkle ranch dressing and au jus gravy mix over the top.
  4. Add pepperoncini peppers and their juice, then pour beef broth around the roast until halfway submerged.
  5. Cover and cook on low for 8 hours or high for 4 hours (or in an oven at 275°F for 5-6 hours).
  6. Stir in butter before serving to enhance richness.
