  • 2 ripe avocados, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 large cucumber, chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse chickpeas and cucumber under cold water. Chop cucumbers into bite-sized pieces.
  2. Halve the avocados, remove the pits, scoop the flesh out, and chop it into chunks.
